Stonehill Tavern closing, rebranding as Michael Mina’s Bourbon Steak – Orange County Register

Michael Mina’s Stonehill Tavern, considered one of the most exclusive restaurants in Orange County over the last decade, is closing at the end of year.

Stonehill at the Monarch Beach Resort in Dana Point, formerly the St. Regis, is rebranding as Bourbon Steak. The modern steakhouse, also by Mina, has locations across the country including Los Angeles, Miami and Washington D.C.

Stonehill is serving its last meal New Year’s Eve. In an announcement made Monday, Sept. 25, the Monarch Beach Resort said it plans to open Bourbon Steak in February after some minor renovations.  Bourbon is Mina’s well-regarded “timeless” and seasonally-driven steakhouse. There, premium cuts of beef including Japanese wagyu are first poached in butter, and then finished on the wood-fired grill.

“I am excited to bring Bourbon Steak to Orange County, and couldn’t think of a better place for it than at Monarch Beach Resort,” Mina said in a statement.
